This picture is from last month. As you can see, he was more interested in wearing food than eating it. John has become a very good eater since then. He's even started to tolerate peas!

Ready for Mr. Winter!

Hopefully he'll get to play in the snow before he grows out of this outfit. Meanwhile, he uses it for his gymnastic routines!

Unique, just like everybody else!

Women wouldn't see this as a good thing, but they took it as a compliment to their clothing taste.

The countdown begins!

It's unbelievable that in just a little over 6 months, we'll be returning to WI for good. What an amazing experience we've had living out here. Along with special memories, we get to take with us our precious little souvenir--John. We're so excited about this next season of our lives.

Happy Halloween!

The week before Halloween, we carved pumpkins and made caramel apples at our neighbor's apt (Megan and Sara). Brent carved his pumpkin into to a mummy face. We baked the pumpkin seeds and they were delicious!

John was a monkey for Halloween. He didn't get to eat the candy, but we let him think he did.

Enchilada Obsession

This is a recipe from my neighbor Jenna. Since I got it in August, I've made it for all my guests. It is soooo yummy and easy to make!

Jenna's White Chicken Enchiladas

1/2 stick of butter
1/4 c. flour
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp salt
1 can (14.5 oz.) chicken broth
3/4 c. fat free sour cream
1 small can chopped green chiles
2-3 chicken breasts, cooked and chopped
~8 oz Colby Jack cheese, shredded
10 flour tortillas

Bake chicken breasts and chop into small chunks. Melt butter in saucepan over medium heat. Thoroughly mix in flour, garlic powder, pepper and salt. Add chicken broth and stir over medium heat until thickened and bubbly. Take off burner. Add sour cream, chiles, and chicken.

Preheat oven to 350 degrees. Shred cheese. Set aside some of the cheese for garnish. Divide remaining cheese among the tortillas. Roll up the cheese filled tortillas and place in ungreased 9x13 baking pan (seam down). Spread sauce over the tortillas evenly. Garnish with cheese. Bake in oven until bubbly. Enjoy!

Binky Patrol

This is our neighbor Brinley. She loves babies and is obsessed with John. She was over the other day and I just had to get a video of this.
